Harty Oysters Limited is a family‑run aquaculture business that cultivates premium “speciale” triploid Gigas oysters for the luxury food market. Building on the pioneering work of Jim Harty, who first recognised the potential of the Celtic Sea, the company now produces more than 600 tonnes of oysters each year, offering four size ranges—from the generous No 0 (150 g +) down to the delicate No 3 (65‑85 g).
