From a modest abattoir behind his Castledermot butcher shop, the business has grown into a fully licensed abattoir and boning hall at Knocknacree, Castledermot, now overseen by Jim’s sons, Niall and James. The company prides itself on the “farm‑to‑fork” ethos, sourcing all beef, lamb and pork from local Irish farmers who raise their stock on grass, hand‑pick each animal and minimise stress to ensure premium quality.
