Milk is drawn straight from cows grazing clover‑rich summer grass, rich in melatonin, and is pumped directly into the cheese‑vat without storage or pasteurisation. Hand‑milled, salted and mixed, the curd is pressed in 40 lb moulds for two days before being matured for over a year at a steady 10 °C.
