fatbaby Bakes is a micro bakery based in Ringsend, Dublin, founded by a New Yorker who lived in Dublin for over 20 years and could not find a decent bagel in Ireland, deciding to fix that. Every bagel is made by hand using the traditional New York method, boiled first then baked, with no shortcuts or compromises. The founder completed a Commercial Baking programme in 2022, travelled back to New York to work inside a bagel bakery and learn the authentic method, and launched fatbaby Bakes in 2024 from home in Ringsend. The bagels use barley malt syrup imported directly from the US, giving them a chewy crust, dense interior, and golden colour. It is a one-woman operation, with the founder baking every bagel herself every Saturday starting at 3am. The business welcomes inquiries about event hosting and supplying fresh bagels to cafés.
